Hasselback Chicken with Steamed Vegetables

Chicken is a popular meat in the UK with Brits pecking their way through millions of products ranging from nuggets to burgers. Chicken is popular among students as it's an affordable meat. This meal allows you to be creative whilst also getting some important vegetables into your diet.

This comfort dish allows you to season your chicken the way you want it and it's good to have a well-stocked cupboard of seasoning so you can choose from.

Hasselback Chicken with Steamed Vegetables

Step 1

Pre-heat your oven 180 - 200. On a lined oven tray, place your chicken breasts and make slits in your fillets. Season the chicken well and add some olive oil. In this dish, we used Italian Herbs but you can use whatever you like. Be sure to wash your hand once you've touched the chicken.

Step 2

In your slits, fold pepperoni slices and stick them in. Top the chicken off with some grated cheese but we also used

some left-over basil leaves and some chopped cherry tomatoes.

Step 3

Once your chicken is in the oven, cook it for around 25 to 30 minutes, now get your vegetables in the steamer. For this we

used carrots and potatoes. Steam these vegetables until cooked, they should be edible and soft. Remove the cooked chicken from the oven and serve on clean plates. Remember to use oven gloves and watch when draining the water from the steamer.
